Dobladas

Although Guatemala shares a border with Mexico, the street food culture in Guatemala is not as strong as in Mexico. Unlike in Mexico, there are almost no street food stands here. But we did find one stand: This stand sold typical Guatemalan "Dobladas".
The name "Doblada" means "folded" and describes the process of cooking this snack. The Dobladas consist of well-seasoned corn flour, from which a slightly thicker tortilla is first formed. This is then filled with beans or meat on one side and the unfilled side of the corn tortilla is then folded over and the edges are pressed down. This creates a small, filled corn flour pocket, which is then deep-fried. The finished Dobladas are topped with tomato salsa, salad and cheese and are the perfect snack.
The Dobladas street food stand was set up every afternoon by a few lovely women. A fire was then made to cook with and after sunset they started frying the first dobladas. Christoph and I often got a doblada from this amazing steet food stall on our way home.
